When blue is green: The role of the marine foods in the green transition
PhD, DSc, Dr.h.c. (Cádiz), FRS-DK, is a research scientist and Emeritus Professor of Gastrophysics and Culinary Food Innovation at the University of Copenhagen, Denmark. He also holds an honorary chair at the University of Melbourne.
His scientific work has focused on basic sciences and their applications in the fields of physical chemistry, biophysics, biomedicine, food science, and taste. He has worked and conducted research on the gastrophysics of all kinds of seafood products and has written several books on the subject. In addition, he has received numerous awards for both his research work and his contributions to science communication.
He is currently President of the Danish Gastronomic Academy. For many years, he has had a deep fascination with Japanese culinary arts and with the way their techniques and flavor elements can be adapted to Western cuisine. He has been appointed Goodwill Ambassador of Japanese Cuisine.
Socio-oceanography in practice: how ocean physics shapes human wellbeing and policy pathways
She is an ocean and climate modeler with more than 25 years of research experience on the impact of climate change on ocean dynamics, ecosystems, and society. She leads the Ocean Biogeochemistry Modelling and Impacts team, as well as the Socio-Oceanography research line at the National Oceanography Centre (NOC), and has published more than 90 peer-reviewed scientific articles.
Over the last decade, she has worked mainly on the challenges of the Global South, leading projects funded by Belmont, ESPA, NERC, and GCRF in African regions that are highly dependent on the ocean for economic stability, food security, and social cohesion. Particularly notable is the SOLSTICE project, funded with £8 million, focused on the Western Indian Ocean.
She also has extensive experience in bridging science and public policy, ranging from fisheries and blue economies to international negotiations such as UNCLOS BBNJ. In addition, she actively contributes to the training of African researchers and policymakers through the NOC’s MOOC on marine ecosystems and food security.
Chemical Processes in Antarctica: From Biogeochemistry to Human Pressure
He holds a degree in Marine Sciences (1995) and a PhD in Chemical Sciences (2000) from the University of Cádiz. He was a postdoctoral researcher (2001–2004) at the Marine Sciences Research Center at Stony Brook University (New York, USA). Since 2007, he has been a senior scientist at the Spanish National Research Council (CSIC), carrying out his research at the Institute of Marine Sciences of Andalusia (ICMAN-CSIC), where he leads the Marine Chemistry Laboratory. His research focuses on the study of marine biogeochemical cycles, addressing projects ranging from marine pollution—such as the impact of sunscreens on coastal ecosystems—to global change and its effects on polar regions.
The oceanography of plastic pollution
He is Scientific Director of the Institute of Marine Sciences of the National Research Council of Italy, at the Lerici Section (La Spezia, Italy). His work focuses on physical oceanography and marine ecology, with special attention to ocean hydrodynamic processes and their climatic and ecological implications. Since the 1990s, he has been researching the distribution and dispersion of marine litter, while also conducting studies in highly diverse environments such as polar areas, deep seas, and hydrothermal vents.
He has actively participated in numerous national and international scientific projects and is the author of more than 150 articles, books, and conference proceedings. In 2017, he received Springer Nature’s “Changing the World One Article at a Time” award for the potential impact of his scientific findings on urgent societal challenges. He is also a member of several international expert groups and holds relevant positions within Scientific Committee on Oceanic Research (SCOR), where he serves as the Italian representative, Vice-Chair, and Chair of Working Group 153 on floating litter and the modelling of its ocean transport. In addition, he has carried out significant science communication work through media appearances, including documentaries and television programs.
